PENNE WITH PINK BACON SAUCE 1 lb. penne pasta 1 jar of Ragu pasta sauce LG 1 / 2 pound bacon 1 / 2 to 1 cup heavy cream 1 tsp. raw red pepper strips bacon cut into small (1 / 4 to 1 / 2 ") pieces. Cook in skillet or large fry until cooked, not too sure the bacon. Add spaghetti sauce and red pepper to the skillet with the bacon. Stir, reduce heat to low and simmer for about 15 minutes to allow flavors to blend. Meanwhile, prepare pasta according to package directions. Drainage. Add 1 / 2 cup cream to sauce and stir. Add more cream to taste. The sauce should be thick and pink. Top pasta with sauce and serve! Cucumbers stuffed with crab 1 / 2 cup shredded crab meat (about 2 ounces) 1 / 4 cup chopped green onion (white and green parts) 3 tablespoons light sour cream 3 tablespoons fresh cilantro chopped 2 tablespoons finely chopped red pepper 1 tablespoon chopped pink pickled ginger slices * 1 English cucumber, cut into 3/4-inch-thick slices fresh cilantro sprigs * Pink pickled ginger slices are available in Asian markets and some specialty food shops. Combine first 6 ingredients in a bowl medium. Season to taste with salt and pepper. (Can be prepared up to 6 hours ahead. Cover and refrigerate.) Using small melon, remove the cucumber leaving housing centers less intact. Fill centers and a little mound of crab mixture on top of cucumber. Garnish each with a sprig of cilantro.
